Buffalo Chicken Mac and Cheese

Ingredients

  • 13 oz dry pasta
  • 1 lb cooked chicken, diced
  • 2 medium bell peppers, diced
  • 1 bunch green onions, sliced
  • 5 cloves garlic, chopped
  • 8 ounces low fat cream cheese
  • 1 cup light blue cheese dressing
  • 3/4 cup buffalo wing sauce
  • 3 cups shredded cheese
  • 3/4 cup panko bread crumbs

Directions

  1. Preheat oven to 350˚F.
  2. Boil pasta in salted water until al dente.
  3. Drain and transfer to 9 x 13 baking dish.
  4. Mix chicken, peppers, onions, and 2 1/4 cup shredded cheese into dish.
  5. Process garlic, cream cheese, blue cheesing dressing, and wing sauce in food processor until smooth.
  6. Mix sauce into baking dish and toss.
  7. Mix remaining 3/4 cup cheese with panko.
  8. Sprinkle over baking dish.
  9. Sprinkle green onions over the baking dish.
  10. Bake until golden and bubbly, about 30-40 minutes.
