Crockpot Chicken Tikka Masala

Ingredients
- 1 large white onion, diced
- 2 tsp paprika
- 2 tbsp garam masala
- 2 tbsp tomato paste
- 3 garlic cloves, minced
- 1 tbsp fresh grated, ginger
- 2 tsp kosher salt
- 2 lbs chicken, 1” cubed
- 30 oz diced tomatoes
- 1 13.5 oz can lite coconut milk
Directions
- Combine onion, paprika, garam masala, tomato past, garlic cloves, ginger, and salt in pan over low heat until spices are pungent, about 3 minutes.
- Place mixture in crockpot with chicken and diced tomatoes.
- Cook high for 4 hours or low for 8 hours.
- Stir in coconut milk and cook on high for 30 minutes.
Serve over rice.
